Quick Blender Pancakes

Some pancakes happen on days when time slips through your fingers, but the wish for something warm and homemade remains. These are blended in moments, without bowls, without noise simply and gently, all in one go. Soft, adaptable and comforting, they’re meant for mornings and afternoons when the kitchen feels like a quiet refuge and a full plate feels like care.

Below is a recipe for quick blender pancakes made without hurry and eaten while still warm.


Easy and fluffy quick blender pancakes served on a plate for breakfast

Ingredients

  • 2 small eggs

  • 120 ml oat milk (see milk note)

  • 150 g plain flour

  • About 50 ml sparkling water (add gradually)

  • A pinch of salt

  • 1 teaspoon neutral oil (optional, for a softer texture)


Method

  1. Add the eggs and oat milk to a blender and blitz briefly.

  2. Add the flour, salt and oil, then blend again just until smooth.

  3. Add the sparkling water a little at a time, blending briefly after each addition, until the batter is smooth and has a yogurt like consistency.

  4. Let the batter rest for 5–10 minutes so the flour can absorb the liquid.

  5. Heat a frying pan over medium low heat and lightly grease it with coconut oil or you can use neutral oil.

  6. Pour in a thin layer of batter and cook briefly about 60 seconds. Flip as soon as the edges start to lift away from the pan. Cook the other side for just 15–20 seconds.


Storing

The batter can be kept in the fridge for up to 24 hours, well covered.

Before cooking, simply give it a quick shake or blend for a few seconds and if needed add one or two tablespoons of sparkling water.

Cooked pancakes can be stored in a sealed container for up to 2 days.


Serving idea

My favorite is apricot jam simple, sweet and fragrant, just like a little childhood treat.

They also go well with:

  • honey or maple syrup

  • fresh fruit (bananas, strawberries, blueberries)

  • a little yogurt or labneh for a creamy contrast


Tip Regular pancakes are soft on their own, so toppings are more for flavor and enjoyment than for moisture.


Milk note Oat milk can be replaced with regular cow’s milk in the same amount. Using cow’s milk will result in a slightly richer flavor and softer texture.

Brze Palačinke iz Blendera

Neke palačinke nastaju kad nema puno vremena, ali ima želje za nečim toplim i domaćim. Ove se umute brzo, bez činija i žice u jednom potezu baš onako kako dani ponekad traže. Mekane, jednostavne i lako prilagodljive, savršene su za trenutke kad želiš da kuhinja ostane tiha, a tanjir pun.

U nastavku je recept za brze palačinke iz blendera one koje se prave bez žurbe, i jedu dok su još tople.

Sastojci

  • 2 manja jaja

  • 120 ml zobenog mleka (pogledaj napomenu)

  • 150 g pšeničnog belog brašna

  • oko 50 ml gazirane vode (dodavati postepeno)

  • prstohvat soli

  • 1 kašičica neutralnog ulja (opciono, za mekšu teksturu)


Priprema

  1. U blender staviti jaja i zobeno mleko i kratko izmiksati.

  2. Dodati brašno, so i ulje, pa miksati kratko dok se smesa ne ujednači.

  3. Dodavati gaziranu vodu malo po malo, kratko blendajući nakon svakog dodavanja, dok smesa ne postane glatka i slična jogurtu.

  4. Ostaviti smesu 5–10 minuta da brašno upije tečnost.

  5. Zagrejati tiganj na srednjoj temperaturi i vrlo blago ga premazati kokosovim ili neutralnim uljem.

  6. Sipati tanki sloj smese, peći oko 60 sekundi), okrenuti čim ivice počnu da se odvajaju. Drugu stranu peći oko 15–20 sekundi ili dok porumeni.


Čuvanje u frižideru

  • Umućena smesa može stajati do 24 sata u frižideru, dobro poklopljena.

  • Pre pečenja je samo kratko promešaj ili izblendaj par sekundi i po potrebi dodaj kašiku, dve kisele vode.

  • Ispečene palačinke čuvati u zatvorenoj posudi do 2 dana.


Ideja za posluženje

Moj favorit je pekmez od marelice jednostavno, slatko i mirisno, baš kao mali užitak iz detinjstva.Odlično idu i sa:

  • medom ili javorovim sirupom

  • svežim voćem (banane, jagode, borovnice)

  • malo jogurta ili labana za kremast kontrast


Savet

Obične palačinke su mekše same po sebi, pa im dodaci služe više za aromu i uživanje nego za vlagu.


Napomena o mleku

Zobeno mleko može se zameniti kravljim mlekom u istoj količini. Sa kravljim mlekom palačinke će biti nešto bogatijeg ukusa i još mekše.
