Millet Pancakes with Oat Milk

Some pancakes aren’t made to impress, but out of a need to give ourselves something warm and simple. These are blended in one go, cooked without rush and enjoyed with apple compote and a little cinnamon yogurt.
No bowls, no noise in the kitchen only what matters remains a few ingredients, the scent of a warm pan and the feeling that even the most ordinary day has gained its quiet moment.

Ingredients (for 10 pancakes)
2 eggs
120 ml oat milk (unsweetened)
7 – 8 tbsp millet flour
pinch of salt
50 ml sparkling water
Coconut oil, for frying
Method
In a blender, mix eggs and oat milk until smooth.
Add millet flour and salt, blend until batter is smooth.
At the end, gradually add the sparkling water a little at a time, stir and let the batter rest for 5–10 minutes so the millet can absorb the liquid.
Heat a non-stick pan on medium-low.
Lightly grease with coconut oil (very thin layer).
Pour in a thin layer of batter and cook briefly (30–40 seconds). Flip as soon as the edges start to lift away from the pan. Cook the other side for just 15–20 seconds or until lightly golden.
Tips for best texture
Use refined coconut oil if you don’t want coconut flavor
Keep heat moderate, millet browns quickly.
Serving ideas (light & gentle)
apple compote (no sugar) mixed with yogurt and dusted with cinnamon
baked apples
These are perfect after lunch, for sensitive digestion or when you want something warm but light.

Sweet
Honey or maple syrup + fruit
Jam + a little yoghurt
Bananas + tahini
Apples gently sautéed with cinnamon
Savory (especially good with oat milk)
Cream cheese + cucumber
Hummus + olive oil
Labneh / laban + za’atar
Mushrooms with a little cream
Tip
Always pair millet pancakes with something creamy or juicy, that’s the key to soft, delicious bites.

Brze Blendera Palačinke od Prosa
Neke palačinke ne nastaju iz želje da impresioniraju, već iz potrebe da sebi damo nešto toplo i jednostavno. Ove se umute u jednom dahu, ispeku bez žurbe i jedu uz kompot od jabuka i jogurt sa malo cimeta.
Bez činija, bez vaganja i bez buke u kuhinji, ostaje samo ono što je važno: par sastojaka, miris toplog tiganja i osećaj da je i najobičniji dan dobio svoj tihi trenutak.

Sastojci
2 jaja, srednja
7 – 8 kašika brašna od prosa
120 ml zobenog mleka
50 ml kisele vode (dodavati po potrebi)
prstohvat soli
kokosovo ulje za pečenje (minimalno)
Priprema
U blender staviti jaja i zobeno mleko, mutiti dok smesa postane glatka.
Dodati brašno i prstohvat soli, kratko izmiksati.
Na kraju dodati kiselu vodu, promešati i ostaviti smesu 5–10 minuta da proso upije tečnost.
Zagrejati tiganj na srednje tihoj vatri, lagano premazati kokosovim uljem.
Sipati tanak sloj smese i peći kratko (30–40 sekundi). Okrenite čim se ivice počnu odvajati od tiganja. Drugu stranu peći samo 15–20 sekundi.
Ponoviti dok se ne potroši smesa.

Idealno sa toplim jabukama ili kompotom uz kašiku jogurta posuto cimetom

Savet
Uvek poslužite proso palačinke sa nečim kremastim ili sočnim, to je ključ mekih i ukusnih zalogaja. Od ovde mere dobije se oko 10ak palačinki.
