Pancake Lasagna

If you ever find yourself with a few leftover pancakes after breakfast or snack time don’t throw them away! Simply freeze them and once you have around ten, you’ve got the perfect base for a quick, tasty and different kind of lunch, Pancake Lasagna. You can prepare it with a meaty filling, vegetables or a rich layer of cheese whatever suits your taste best.

This is one of those recipes that once you’ve tried it, you just have to write it down. It’s so practical yet surprisingly delicious, that it quickly turns from a little kitchen trick into a dish that becomes a regular favourite on the table.
Ingredients for the meat filling
3 tbsp sunflower oil
1 onion, chopped
1 carrot, grated
250 g pork mince
100 g tomato puree
1/2 tsp oregano
salt and freshly ground black pepper or
1 tsp Vegeta, vegetable seasoning
Also needed
10 pancakes
150 g mozzarella, grated
100 g crème fraîche
100 g dry-cured mustard ham, chopped
3 tbsp ketchup
Salad to serve
The filling
Heat oil in a pan, sauté the onion for a few minutes, then add grated carrot and cook gently for about 5 minutes. Add minced meat, seasoning and tomato juice, then simmer for about 20 minutes until the filling is well cooked.
Layering
In a greased baking dish (28 × 20 cm), layer as follows:
2 pancakes – half of the meat filling
2 pancakes – cream, ham, cheese, ketchup
2 pancakes – the other half of the meat filling (you can sprinkle a little cheese on top so it melts and binds everything together)
2 pancakes – cream, ham, cheese, ketchup
Finish with the last 2 pancakes and sprinkle generously with grated cheese.
Baking
Bake in a preheated oven at 200°C / 180°C fan / Gas Mark 6, for about 10–15 minutes or until the cheese is melted and everything is nicely golden. Enjoy this unusual but perfect blend of pancakes and lasagna!

Lazanja od Palačinki
Ako vam se ikada desi da ostane nekoliko palačinki nakon doručka ili užine nemojte ih baciti! Jednostavno ih zamrznite, pa kad skupite desetak, imate savršen osnov za brz, ukusan i drugačiji ručak: lazanju od palačinki.
Možete je pripremiti sa mesnim filom, povrćem ili bogatim slojem sira baš onako kako vama najviše prija. Spoj poznatog ukusa palačinki i sočnih slojeva pretvara ovo jelo u pravi porodični favorit a priprema je jednostavna i zabavna.

Ovo je jedan od onih recepata koji, kad se jednom proba, odmah mora i da se zapiše. Toliko je praktičan a opet iznenađujuće ukusan, da se vrlo brzo od slučajnog „trika“ pretvori u jelo koje se redovno ponavlja u kuhinji. I svaki put donese istu onu radost prvog zalogaja.
Sastojci za mesni nadjev
3 kašike suncokretovog ulja
1 luk, iseckan na kockice
1 rendana mrkva
250 g mljevene svinjetine ili junetine
100 ml soka od paradajza
2 kašičice vegete
1/2 kašičice origana
Još potrebno
10 palačinki
100 g trapista ili mozzarelle, rendane
100 g salame ili šunke, seckane
3 kašike kečapa
100 g kajmaka
salata, poslužiti
Nadjev
Na ulju propržiti luk par minuta, dodati rendanu mrkvu i pržiti na laganoj vatri oko 5 minuta. Dodati mljeveno meso, začine i sok od paradajza, pa dinstati oko 20ak minuta, dok nadjev lepo ne ukuva.
Slaganje
U podmazanu vatrostalnu posudu (28 × 20 cm) redom slagati:
2 palačinke – pola nadjeva od mesom
2 palačinke – kajmak, šunka, trapist, kečap
2 palačinke – druga polovina nadjeva sa mesom (po želji malo sira preko mesa, lepo sve poveže)
2 palačinke – kajmak, šunka, trapist, kečap
Završiti sa preostale 2 palačinke i posuti rendanim trapistom.
Pečenje
Peći u prethodno zagrejanoj rerni na 180°C (fan) oko 10–15 minuta, sve dok se sir ne otopi i sve dobije finu zapečenu koricu. Uživajte u ovom neobičnom ali savršenom spoju palačinki i lazanje!
