This is delicious straight from the oven and paired with custard or ice cream
1 tbsp caster sugar
1 tsp vanilla extract
1 tbsp water
100g plain flour
100g unsalted butter
40g Demerara sugar
3 tbsp rolled oats
1/2 tsp ground cinnamon
1 tbsp Demerara sugar, to sprinkle
1. Preheat the oven to 180°C / 160°C Fan / Gas Mark 4. Peel, core, and chop the apples into cubes and place into a saucepan with the sugar, vanilla, and water. Cook for 5 minutes on a medium heat.
2. Transfer and spread the apple mixture evenly into the ovenproof dish, then put aside and start on the crumble topping.
3. For the crumble, pour the flour, butter, sugar, oats, and cinnamon into a food processor and process until a crumbly texture is achieved.
4. Top the apple filling with the crumble and sprinkle the extra 1 tbsp Demerara sugar. Bake for around 20 minutes or until the crumble begins to brown lightly.
