Eh sto volim te stare pozutele listove...Ponekad je za sreću dovoljno samo jedno parče 🍋 Ova pita od limuna i vanile pravo je oličenje jednostavne elegancije – nežan, kremast fil sa notama sveže narendane kore limuna i mirisne vanile, smešten u prhko, puterasto testo. Savršena za prolećna popodneva, lagane proslave ili one trenutke kada vam treba nešto što miriše na dom i sunce. Priprema je jednostavna, a rezultat… nestane brže nego što stignete da skuvate kafu!

Za kore

250 g brašna

200 g *šećera

80 g maslaca

1 jaje i malo praška za pecivo


Za vanila kremu

900 ml mleka

3 kesice pudinga od vanile

6 kašika šećera

1 kesica vanilin šećera sa aromom limuna

naribana korica limuna

150 g maslaca

100 g **šećera u prahu


Priprema

1.U prosijano brašno dodati hladan maslac, isečen na kockice i rukama ga lagano utrljati u brašno. Dodati šećer, prašak za pecivo i jaje, pa umesiti glatko testo. U zavisnosti od veličine jajeta, možda će vam biti potrebna i kašika-dve mleka da se testo lepo sjedini.


2.Testo podeliti na dva dela, razvaljati na otprilike 30×30 cm i peći kore na obrnutom plehu u rerni sa ventilatorom na 180°C, oko 8 minuta, ili dok blago ne porumene sa strane — kore treba da ostanu svetle.


3.U međuvremenu pripremiti fil. Od ukupne količine mleka odvojiti malo da razmutite puding, a ostatak mleka staviti da provri sa šećerom. Ukuvati puding u gust krem i ostaviti da se potpuno ohladi. U ohlađeni krem dodati rendanu limunovu koricu i prethodno penasto umućen margarin sa šećerom u prahu.


4.Sve dobro sjediniti i filovati kore. Najbolje je da kolač odstoji preko noći, kako bi kore lepo omekšale. Po želji, kolač možete preliti čokoladnom glazurom ili samo posuti rendanom čokoladom.


Savet

Šećer* za kore možete smanjiti na 120 g, a za fil** ako ne volite previše slatke kolače, koristite samo 6 kašika kristal šećera, a gotov kolač pospite kašikom šećera u prahu.

This Lemon Vanilla Pie is the perfect embodiment of simple elegance — a soft, creamy filling with notes of freshly grated lemon zest and fragrant vanilla, all nestled in a delicate, buttery crust. It's ideal for spring afternoons, light celebrations, or those moments when you just crave something that smells like home and sunshine.

It’s easy to make, and the result… disappears faster than you can brew a cup of coffee!


For the Dough

250 g flour

200 g * caster sugar

80 g butter

1 egg

A pinch of baking powder


For the Custard

900 ml milk

3 packets of vanilla pudding powder

6 tablespoons sugar

1 packet of lemon-flavored vanilla sugar

Grated lemon zest

150 g butter

100 g ** icing sugar


Method

1.Add cold, cubed butter to the sifted flour and gently crumble it with your hands. Add sugar, baking powder, and the egg, then knead into a dough (depending on the size of the egg, you may need to add a tablespoon or two of milk to bring the dough together nicely).


2.Divide the dough into two parts, roll each out to about 30x30 cm, and bake the layers on the back of a baking tray in a fan-assisted oven at 180°C (350°F) for about 8 minutes or until the edges begin to lightly brown. The layers should remain pale.


3.Meanwhile, prepare the cream filling: reserve a bit of the milk to mix the pudding powder, and bring the rest of the milk with sugar to a boil. Stir in the pudding mixture and cook until thick. Let the custard cool completely, then add grated lemon zest and the margarine previously whipped with icing sugar.


4.Mix well until smooth. Spread the cream between the two baked layers. It's best to let the cake sit overnight so the layers soften. You can top it with chocolate glaze or simply sprinkle with grated chocolate.


Tip

You can reduce the sugar in the dough to 120 g. For the cream, if you prefer less sweetness, use only 6 tablespoons of sugar and dust the finished cake with icing sugar (just 1 tablespoon is enough).
