Homemade Zdenka’s Pizza

Soft dough that works every time
Some recipes are passed down through generations and some quietly arrive from a dear friend and stay forever.
The dough is soft, the crust is stuffed with cheese and the smell while it bakes, fills the whole house.

Ingredients (for 3 pizzas)
For the dough
200 ml milk
200 ml water
3 tbsp olive oil
1 tbsp sugar
2 tsp salt
560 g bread flour
7 g dry yeast
For the topping
300 g pizza sauce
200 g salami (+ extra for stuffing the crust)
400 g semi hard cheese (Trappist style or mozzarella blend)
2 tsp oregano

Bread machine method
Add milk, water, olive oil, sugar, salt, flour and yeast (last) to the machine. Select the dough setting and let the machine knead and rise the dough.
Hand kneading method
Warm a small portion of the milk (about half a small coffee cup). Mix with a teaspoon of sugar and the yeast. Let it activate for a few minutes.
Place flour in a large bowl. Add the activated yeast and the remaining ingredients.
Knead until smooth and no longer sticky.
Transfer to a lightly floured surface. Knead for about 10 minutes until small air bubbles form.
Cover with a clean kitchen towel and leave in a warm place to double in size.
Shaping the Pizza
Divide the dough into 3 equal balls.
Roll each ball into a circle.
Place cheese and salami along the edges, then fold the edges inward to seal the stuffed crust.
Spread pizza sauce over the center.
Add remaining salami, vegetables and cheese as desired.
Sprinkle with oregano.
Baking
Preheat the oven to 180°C (350°F).
Bake the pizza for 25–30 minutes, until the edges turn golden brown.
Tip
If you can’t eat all three pizzas, freeze one before baking. Next time, simply take it out of the freezer and bake it like freshly made.
For a crispier crust, bake the pizza on the lowest oven rack.
Add a little Parmesan near the end of baking for a richer flavor.

Domaća Zdenkina Pizza
Recept koji uspeva svaki put!
Ponekad je dovoljno nekoliko jednostavnih sastojaka i malo strpljenja da kuća zamiriše na toplinu doma. Tjesto mekano, ivice punjene sirom a dok se peče, miris se širi kroz kuću i već najavljuje prvi topli zalogaj.
Priprema traje nešto duže, ali pizza sa stola nestane za svega nekoliko minuta.

Sastojci (za 3 pice)
Za tjesto
200 ml mleka
200 ml vode
3 kašike maslinovog ulja
1 kašika šećera
2 kašičice soli
560 g brašna za hleb
7 g suve germe
Za premaz
300 g sosa za pizzu
200 g salame (+ još malo za punjene ivice)
400 g trapista ili mešavina mozzarella / trapist
2 kašičice origana

Priprema
Ako koristite pekač za hleb
U posudu staviti mleko, vodu, maslinovo ulje, šećer, so, brašno i na kraju germu.
Izabrati opciju za testo i pustiti mašinu da umesi i nadođe testo.
Ako mesite rukom
Ugrijati malu količinu mleka (oko pola šoljice), dodati kašičicu šećera i germu. Ostaviti da nadođe nekoliko minuta.
U veliku posudu staviti brašno. Dodati nadošlu germu i ostale sastojke.
Mesiti dok testo ne postane glatko i više se ne lepi za ruke.
Prebaciti na pobrašnjenu površinu i mesiti još 10-ak minuta dok se ne pojave sitni mehurići.
Pokriti čistom krpom i ostaviti na toplom da tjesto udvostruči zapreminu.
Oblikovanje i filovanje
Podeliti tjesto na 3 jednake loptice.
Svaku lopticu razviti u krug.
Po ivicama rasporediti sir i salamu, zatim preklopiti ivice ka unutra da se zatvori punjeni rub.
Sredinu premazati sosom za pizzu.
Dodati ostatak salame, povrće i sir po želji.
Posuti origanom.
Pečenje
Rernu zagrejati na 180°C.
Pizzu peći 25–30 minuta dok ivice ne postanu zlatno-smeđe.
Saveti
Ako ne možete pojesti sve tri pizze, jednu zamrznite pre pečenja. Sledeći put je samo izvadite iz zamrzivača i ispecite kao sveže pripremljenu.
Za hrskaviju koru pecite pizzu na najnižoj žici rerne.
Dodajte malo parmezana pred kraj pečenja za bogatiji ukus.
