Coconut Paw Cookies /Šape /Sape od Kokosa

Some recipes don’t need a special occasion. They are there to remind us of a kitchen filled with warmth, of hands that knew the steps long before we did, of recipes that were never really written only remembered.
This one comes from a place like that from my mother’s yellowed recipe pages, written in a quick, familiar hand, with traces of flour and vanilla left behind as proof it was made over and over again.
“Šape” were always part of those memories. Back then, made with walnuts, shaped in old molds that carried both weight and quiet stories of their own.

I still keep her old molds, carefully tucked away, little treasures that hold more than just shape.
Today, I make them a little differently with coconut. Lighter, softer, but still holding that same feeling that lingers long after the last bite. Because it doesn’t really matter if they are made with walnuts or coconut. What matters is that they are šape.
Ingredients
2 free range eggs
150 g icing sugar
1 tsp vanilla sugar
250 g unsalted butter
100 g desiccated coconut
500 g plain flour
1 tsp baking powder
Method 1. Beat the eggs and sugar in a large bowl with an electric mixer until combined, then add butter. Stir in the coconut, then sifted flour and baking powder. 2. Cover the dough in cling film, leave it to cool in the fridge for 30 minutes or overnight. Bring the dough back to room temperature before filling the moulds. 3. Preheat the oven to 170 C. Grease the moulds with sunflower oil spray and take a teaspoon of dough to fill each mould. 4. Bake for 10-12 minutes or until browning on the side whilst still mostly pale. Allow to cool in the moulds for a couple of minutes, then transfer onto a cooling rack and leave to further cool. Dust with extra icing sugar before serving.
Tip / Advice
My molds come in different sizes, so I usually place the smaller paw cookies on one baking tray and bake them for about 10 minutes. The larger ones I leave for another 2–3 minutes. The paw cookies are done when they start to lightly brown at the edges but should remain pale in the center.
This quantity makes about 70 paw cookies, enough to share with family and friends and still have some left for later.

Postoje kolači koji ne traže posebnu priliku. Oni su tu da nas podsete. Na kuhinju koja miriše na nešto toplo i poznato, na ruke koje su sve to već radile pre nas, na recepte koji se ne pišu nego pamte.
Ovaj recept dolazi baš sa takvih mesta sa majkinih požutelih hartija, ispisan nekom brzom rukom, sa ponekom flekom od tjesta ili vanile, kao znak da je mnogo puta bio deo naših porodičnih trenutaka.
Šape su uvek bile deo tih priča. Nekada sa orasima, oblikovane u starim kalupima koji su imali svoju težinu i svoju tišinu.

Još uvek čuvam njene stare kalupe, pažljivo spremljene male dragocenosti koje kriju više od samog oblika.
Danas ih pravim malo drugačije sa kokosom. Lakše, nežnije ali sa istim onim osećajem koji ostaje dugo nakon poslednjeg zalogaja. Jer nije važno da li su od oraha ili kokosa. Važno je da su šape.
Potrebno
2 jaja
150 prah šećera
1 vrećica vanilin šećera
250 g neslanog maslaca
100 g kokosa
500 g brašna
1 mala kašika praška za pecivo
Priprema
1. Jaja sobne temperature mutiti mikserom, postepeno dodavati prah šećer i vanilu. Kad se fino sjedini dodati omekšali maslac. Tome dodati, kokos, brašno sa praškom za pecivo i sve zajedno zamesiti.
2. Zamotati u prozirnu foliju i staviti u frižider preko noći. Mogu se peći i nakon par sati, tjesto izvaditi iz frižidera da odstoji 30ak minuta. Tjesto je mnogo fino za raditi ali je potrebno da neko vreme odstoji na fladnom.

3. Kalupe za šape dobro nauljiti (možete ih i pobrašniti) te ih puniti, pa peći u predhodno zagrijanoj rerni na 170C 10-ak* minuta. Ostaviti u kalupima minut-dva pa ih izvaditi na žicu da se ohlade.

4. Pre služenja
Posuti šapice prah šećerom aromatizovanim vanilom, tako da svaka nosi i blagi sladak miris koji podseća na djetinjstvo.
*Savet
Moji kalupi su u raznim veličinama, pa na jedan pleh obično stavljam manje šapice i pečem ih oko 10 minuta. Veće ostavim još 2–3 minuta. Šapice su gotove kada blago porumene sa strane, ali trebaju ostati svetle u sredini.
Od ove količine dobije se oko 70 šapica dovoljno da se podeli i sa porodicom i sa prijateljima a i da ostane za kasnije.
